What is a Rutabaga? 

Rutabaga is a root vegetable hybrid of cabbage and turnips. This cruciferous veggie boosts your immune system, lowers blood pressure, cholesterol and also improves digestive health.  

High levels of manganese, potassium, phosphorous, magnesium, calcium, iron, and zinc, as well as vitamins like vitamin C, E, and K are found in Rutabagas.

Most food alternatives sound much better than they actually taste. It’s just a fact.  To replicate flavor while replacing key ingredients is a really difficult task.  My approach was just to avoid certain foods all together. Understanding that this strategy doesn’t get a lot of listeners, I decided to put my badge of self-fulfilled restraint to the side and expand the o’l palette and explore some sweet and savory dishes that will hopefully get me some backers once and for all.  French fries are something that just about anyone living and breathing loves.  If someone says they don’t, they are hiding behind a fragile badge and living in the dark recesses of denial.  Don’t end up like that and try the Rosemary Lemon Garlic Rutabaga Fries.  These fries are a low carb, healthy solution for those savory frenzied outbursts you’ve been so ashamed of.                And you know this.

Ingredients

4-5 rutabagas peeled, and sliced

2 tbsp. olive oil

1/2 tbsp. lemon juice

1/2 tsp. sea salt

1/2 tsp. black pepper

4 cloves of garlic (minced)

4 sprigs of fresh rosemary

Chipotle Dip

4 tbsp. vegannaise or mayonnaise

2 tbsp. lemon juice

1/2 tsp. chipotle

1/2 tsp. chili powder

1/4 tsp. sea salt

Serving Size: 4

Instructions

Wash and peel rutabagas, then cut into 1/4 sticks.  

Preheat oven to 425º.

toss chopped rutabaga, minced garlic, olive oil, lemon juice, rosemary, salt, and pepper.

Bake in a baking sheet for 15-20 minutes, shake the pan once or twice.

To make the Chipotle Dip, combine the ingredients for each in a small bowl and mix using a spoon.
